I know that speed is proportional to voltage and torque is proportional to current. Now, consider example of uphill driving. When we press accelerator paddle, what exactly happens?

Many EVs use induction motors which don’t vary speed based on voltage. The frequency is what controls the speed of rotation. EVs don’t use typical brushed DC motors, they make 3 phase AC (Aka brushless “DC” motors).
