I’m pretty sure you shouldn’t keep bread in the fridge… Condensation will encourage moulding.

The bag isn’t airtight, and any normal indoor air contains tiny mold spores (think of them like the seeds of plants). Once a spore finds a spot to grow, it starts reproducing using the bread as food.
