Music theory is the system used to understand why music sounds pleasing or unnerving. The distance between notes, called an interval is what determines whether or not a melodic passage has consonace, a feeling of resolution or happiness; or dissonance, a feeling of tension or sadness. This is a very brief over simplification.
Physically, dissipation of energy is probly the underlying thing. But it’s theory of mind, empathy, pathos, with-feeling that matters, it’s not forced by something fundamental in music
