How does my food come in different colors and come out brown/black

The brown colour of stools is caused by bilirubin, a waste product that comes about when haemoglobin (from red blood cells) is broken down. It comes out of the liver in bile, and then makes it way out with the rest of the waste. The colour can also be influenced by what you eat, but generally when you mix all colours together you get brown/black
