Roots don’t find water.

Roots spread. When the roots come upon an area that has more moisture, they spread more roots in that area.

If no moisture is found, the plant dies.

So when you see an alive plant with a long root shooting down a rock race into soil, it was completely random that it managed to find that soil, while its neighbors died out.
