Depends in the setup, but in many cases those computers arent actually running windows. They’re hosted by a server that is virtually sectioned off. So all the computers are independent, but all are simultaneously controlled by the server. To reset, the server basically just closes a session and then opens a new one.

Windows has a feature called mandatory profiles that do not allow saving of settings or changes to the desktop. Another way is a through an application like DeepFreeze that restores everything after a reboot.
