How does silica gel absorb moisture? Does it ever go bad?

Silica gel crystals have space for water molecules in their structure. If you remove the water, then it will gladly yoink floating water molecules out of the air.

It doesn’t really go bad, but it can fill up with moisture and stop working. You can fix it by baking it at ~120°C. While not edible IIRC most types (except the ones with *blue* indicator dye, which is harmful) are pretty much food safe, so you can just use your normal oven (and use the gel packets to keep cookies in a tin from getting soggy).
