how does skin heal from cuts, burns etc?

Your skin is always growing and flaking off the outside layer. This happens with or without a cut. With a cut, that just takes time for the body to grow its new layers that aren’t cut or burnt.
Along with your skin constantly in a state of growth and repair, keep in mind that it was evolved for that purpose. It gets damaged, and either knits new skin or in cases where the damage is more severe, provides a substitute (scars) because people who received infections or bleed out tend to die.
