How exactly do photographers capture a picture of lightning?

Long exposure.

By setting the camera so it doesn’t let in much light you can leave the shutter open for several seconds (or even minutes). In that time the background image will get correctly exposed, and any lightning strikes which occur will be bright enough to appear anyway.

You can then just take photo after photo after photo until you get a strike in frame.
