When water absorbs heat, the molecules start moving faster. Some of the molecules will be moving fast enough to escape the liquid altogether and evaporate, taking all the energy it absorbed with it.

So when you sweat, the water is absorbing heat from your body. Then it evaporates, taking that heat away from your body and into the air.
