How sleeptalkers/walkers are able to see/hear while asleep?

It seems like they (sometimes) can accurately respond to audible/visual stimuli. Can we ALL hear/see while asleep but we just don’t know it?

Yes, our brain still sees/hears while we’re asleep. After all, if it didn’t, then bright lights or loud sounds would not be able to wake sleeping people up.

When we’re asleep our conscious mind is dormant, so we can’t actively perceive inputs, but our subconscious is still active and processing our senses.
