if IPs can change several times, how do apps deal with functionalities that required your previous IP? Also, why is IPv6 not the norm (i.e. in video games, web browsing, etc.)?

Apps don’t care what your IP is and IPv6 attempted to solve a problem that was solved 20 years earlier, so it is looking exceedingly unlikely to replace IPv4 any time soon. Very few ISP’s support it which is why it is basically never used, and when it is used there is always an IPv4 fallback anyway.
