if it was possible with with a device to slice the earth clean in two what would happen to the two halves?

Absolutely nothing, both halves would remain stuck/come back, it’s gravity that keeps it together,not its structure. It would just coalesce again.
If there was no impulse or acceleration imparted to the halves by this slicing then they would just continue to stick together from their mutual gravity.
Depends how thick the slice is. If it was very thin then as the other comments have said nothing would really happen. However if you took a solid 1m slice out of the center of the Earth then the two halves would slam into each other with enormous energy.
You would have a very bad day. Now if there was no energy imparted onto the planet then the planet would continue sticking together. But with the Earth’s crust cut you would have a giant circular volcano around the world that would spew magma and gas. This release would be a global killer until the crust could scab over and life could restart.
