If there’s an ellipse in the way of my ellipse, how many ellipses do I put?

A while ago, I was assigned an assignment in language arts that required two quotes. However one of the quotes I decided to use had an ellipse (…) which wouldn’t normally be an issue. Except the information from the quote I needed was separated by some information that wasn’t pertinent at all, and this useless information began right after the ellipse. So in this extremely rare situation, would it be grammatically correct to put two ellipses or just one.

I think just one. E.g:

‘And really I think… it’s bread, really.’

“And… it’s bread, really.”
