I’m in an NLP program and I still can’t find a solid answer as to what it actually is, so what is it?

Every one that explains it gives these long drawn out confusing explanations of it.

From my understanding, it basically just changing your beliefs, right?

So if you believe you’re unworthy, changing it to “I am worthy” ?

Nobody can seem to give a solid answer and it confuses me….

As has been noted, yes it is pseudoscience without any actual verified benefits.
Your explanation is pretty much spot on – the main hypothesis is that you can change yourself, for example become more successful, by changing your self-image.

Unfortunately just changing how you see yourself does not necessarily make you better at anything practical, that requires changing strategies, methods, goals etc.
