Your internal organs aren’t rigidly fixed in position. They’re suspended in your abdomen by your other organs and internal structures.

When you suddenly go down a hill, your stomach remains in place for a while as your body starts going downward, and that’s the sensation you’re feeling.

Simply put, it’s your internal organs moving around because of a change in force. They go back in place when you’re done riding.

Your bodys release of adrenalin. It makes a «cold / butterflies in stomach» feeling, and in i.e. a rollercoaster the butterflies gets really ramped up.

feelingThe feeling is caused by the sudden change in speed and direction. When you go down a hill, your body is suddenly pushed down by gravity, and when you go on a roller coaster, your body is pulled up and down by the force of the coaster.

It is as others said, your internal organs are moving in usual ways, but… It is also as someone else said, the adrenaline rush of doing something our instincts say is dangerous, but… it is also your inner ear keeping track of your direction of travel. The inner ear is also what makes you dizzy if you spin around too much. The combination of all three makes the experience. Your thinking part of your brain cannot see the adrenaline or the inner ear… but it can feel the tummy move… and so the other feelings are often just assumed to come from the tummy. It is a neat trick of the mind.
