what are canker sores and why are they so darn painful?

I am currently reeling from one, and I don’t understand where this little white dot came from and why it can cause so much pain.

I used to get them chronically. I asked my dental hygienist about it and she suggested taking a multivitamin with chromium. It worked, and now I only have a few a year. Nutrient deficiency is one possible explanation, but people seem to get them for other reasons too.
