What are smells?

What exactly are smells? I understand they are some kind of particle, but what actually makes them smell? Why do cookies smell sweet and skunks smell bad?

They are chemical compounds in the air. Those chemicals are detected by a bundle of nerves at the top of our sinuses called the [olfactory bulb](https://en.wikipedia.org/wiki/Olfactory_bulb). Those nerves sense the various chemicals and send signals to our brain, where it is perceived as smell and/or taste.
