Midi is basically digital sheet music, while it contains all the information you need to recreate the music, you still need to play it, and you can play it with different instruments that will have slightly different sounds, this can be very useful when composing a song with a digital keyboard because you can record the midi and edit if you messed up some notes or change the sound, but midi doesn’t won’t work for lyrics or sound effects/filters

A digital recording is just that, a digital representation of the actual sound you hear, this is done by recording the amplitude (or volume) tens of thousands of times a second, and pitch is just how many times a thing happens in one second, so you are basically recording all the sound information already with just amplitude and time, and as long as you have enough precision, you can get an almost perfect repression of the original sound that was recorded no matter what it was (although i should say that most digital music is compressed so some detail is lost, but most causals don’t even notice)
