Means to be sold as *extra vergine*, it needs be pure, native oil from olives meeting specific criteria, with maximum 0.8% fatty acids for extra vergine, and a maximum of 2% of acids for vergine, plus often a specific maximum amount of phosphates.

It has to do with the pressings.
The first pressing (the purest) is Extra Virgin
The 2nd pressing is Virgin
The 3rd and other pressings are used for other oils.
There is also a bunch about acidity and stuff.

It means those olives haven’t even held hands or kissed someone. They are EXTRA virgin!
