Incognito (for chrome anyway) does t do anything.
Other than not save browser history. Bookmarks, downloads and all that are still in the open, and the websites you visit will know that ur ip connected.

If you want true privacy, try tor. Its a very (read: very very very very) provat and secure browser that acts as a triple vpn. Whats more, unlike vpn companies, tor is completely free, and is secure to the point that its vecome the only way to access the dark web (not recommended though) and will protect you.

Basically :
Incognito on chrome will hide your search history from yourself and anyone not too tech savy (good for hiding secret gifts from a SO)

Private on Firefox will do the same but also prevent any form of cookies etc from being planted, and send a do not track request (good from hiding your closeted sexuality from a technical parent)

Using a vpn will hide your ip form the websites you vist in conjunction with the two above (but the vpn itself may track you so be careful) (good for making it so your embarrassing hobby of editing leud wiki articles isnt directly traced back to you OR for accessing content from other countries )

Using tor browser will make you anonymous to a rediculous degree, and protects you from being exposed by the government for out pizzaing the hut (if used correctly) (good for accessing free media in auth countries and/or accessing information about GSRM rights in hostile nations)
