What exactly is essence for flavoring? And how does it work?

I don’t understand fruit flavoring for waters etc. but w/o the sugars etc.

Well, are you assuming sugar is the only thing that is sweet or flavorful? Lick the ground, lick a flower, lick a tree, eat a big… you’ll find flavors in everything. Now, compile those compounds into a concentrated liquid and you have flavoring.
