What is happening when vegetables like spinach turn to mush in the fridge? Why does this happen to some greens but not others?

Plant matter will lose structure if it freezes and ice crystals break it apart. Your vegetables might be stored next to the coolant pipes where the temperature falls below zero during part of the refrigerator cycle. The cold is not necessarily uniform throughout the whole fridge.

To add to the other comment they also dehydrate, putting them in fairly cold water allows them to have a sip and perk up again, not as good as fresh but better than nothing
