I had a bike accident where i fractured my finger in three different parts, I noticed not because of the pain but because I saw that the middle phalanx was a good cm to the left of its standard position. I realigned it and still didn’t feel anything for a good 10 minutes.
On the other hand, when i bump my shin in furniture, I feel atrocious pain immediately.
What triggers this difference in response in different injuries?

It depends on your injury type, location of injury and psychological state. Fractures and cuts release more adrenaline because they damage tissue and activate nerves and glands. Also, the more nerves = more adrenaline. And if something is completely new and shocking to you, then it might also produce more adrenaline
