If it happens fast, not a whole lot. They will just pass through each other. A few stars may get displaced, but space is very empty, so almost nothing will collide.

If it happens slowly, the two galaxies will become one. Usually it will form an elliptical galaxy (as opposed to a spiral galaxy that we live in). Again, space is very empty, so very few collisions would actually happen.

Dust clouds would be the largest structures in the galaxy, and if those collide it could spark some new star formation, but no more than if a nearby supernova went off.

TL;DR space is empty, galaxy collision doesn’t do much.
