When learning a musical instrument, why do you feel that you can’t improve anymore (or even feel that you’re unlearning), then you go to sleep and the next day you feel that you’ve actually improved a lot?

Your brain is still working on the problem while you sleep. You’re giving your brain the rest it needs to save the new knowledge to memory. Plus the added bonus that your consciousness isn’t getting in the way. I’ve had moments where I’ve quit in frustration for a few weeks and then see a significant boost when starting again. Brain power is pretty crazy.
