When looking at something bright or sunny, why does it hurt to have both eyes open but not just one?

The reason is because your body has safety protocols built in to prevent you looking at too bright a light and thereby damaging your eyes. However, this is accomplished by measuring the total light being received in the brain. If you close one eye, it assumes that the brightness you’re seeing just decreased by half.
