When you stop the installation of a software halfway through, what happens to the leftover files?

That depends. Normally the installater would revert the installation, deleting all the files it installed. If the installer was killed instead, then the files would be just left there.
Depends on the installer most installers unpack to temp locations before moving to end location. Some installers clean up if you press cancel but if the install fails and ends abruptly it may not be able to clean up.
