Mostly to create gothic Flesh Golems, though some get used to make hotdogs.
For serious though, any bits removed from a human get destroyed as toxic, medical waste. Literally thrown into a giant incinerator and burned to dust. This is why no one is ever allowed to take ZYX home in a jar anymore. It’s all tightly regulated now.
EDIT – I stand corrected, depending on where you are (In the US at least) you may be able to get your bits returned to you if you ask. Some states have laws preventing it though.
