Our stomachs have very strong gastric acid (pH 1-3). In such environment, the acidity of the food should not change its pH much. The why do we sometimes get irritated stomach because we ate too much sour fruits?
And also, do alkaline food like almond and celery really sooth the bowel at all?

This really depends on what you’re referring to as “stomach irritation”
Peptic ulcer disease, which causes stomach pain, is not caused by diet but by an infection of H pylori, a bacteria, or by certain medications such as NSAIDs (e.g. Ibuprofen).
Gastroesophageal reflux, or heart burn, is caused by a weakening of the muscle that prevents your stomach contents, including acidic digestive juices, from flowing up into your esophagus (which connects your mouth to the stomach). In this case, certain foods, such as acidic foods or spicy foods, may worsen the heartburn which is being caused by irritation of the esophagus by stomach acid.
