Basically, Your hair gets tired of making all that color.

As we age the level of Methionine sulphoxide reductases or MSRs in our hair drops, which increases the level of hydrogen peroxide in the hair. Tyrosinase an enzyme which governs melanin in the hair is disrupted by the low levels of MSR and high levels of hydrogen peroxide resulting in grey hair. Remember that hair is coloured by melanin. Brown hair is eumelanin and red hair pheomelanin. Same stuff thats in your skin and eyes. When you age your hair stops being able to produce this protective melanin. So grey hair is also more likely damaged by UV rays from the sun.
