Why are fusion reactors hotter than the sun?

Every article you read talks about how current experiments achieve temperatures many times hotter than the center of the sun. Can’t we just try for equal temperatures to achieve fusion energy?

The sun also has a gargantuan amount more pressure and volume of hydrogen than we do so in order to get to that level of reaction we need to increase the heat.
