Your whole body is buoyant in water. Hands are flatter (and weight less). When you make your body flat by lying on your back in water, your body will float, and if you turn your hands so they aren’t flat, they will sink.

If I’m not mistaken, there is a lot of cartilage in the finger joints that builds up with a gas of some sort. It’s released when your joints pop. Could be related.
