Why are Polar bears the only type of bear to hunt and eat humans?

How many Humans have been eaten by Polar Bears for us to be seen as food to them, or do they just eat any mammal smaller than them

They aren’t. The polar bear, the brown bear (grizzly), and the black bear have all been known to kill and eat humans. There are other bears, but I am not familiar with their habits.

They live in an extreme environment where calories are very scarce. Most predators are very risk-averse, injury can mean death from starvation. So they’re very disinclined to hunt things they’re not familiar with.

Predators in extreme environments can’t afford to be so picky. If they actually come across a potential meal, they won’t pass it up easily.

Just look at the extreme adaptation deep-sea fish have gone through to make this possible. Some deep-sea fish are capable of swallowing animals bigger than they are whole.
