I’ve always wondered this. Why is my coffee great when it’s hot, still good when it’s iced, but absolutely disgusting when room temp? Same for other beverages.
I know with some alcohols, the temperature can change the flavor and texture. With vodka for example it’s recommended that you chill it vs freezing it. Some flavor profiles shine in different temperature environments.

In terms of the room temperature thing, I think it is because we associate room temperature beverages with something that has been sitting out too long.
