Its caused by the genetics of the chicken. Some breeds make white eggs and other make brown. There are even some chickens that produce green and blue eggs. I used to have a few of them until Mr. hawk got them.
Pigment in shells is genetic factor mostly, like human hair color. So if there is no pigment – egg shell will be white. Also lack of some amino acids in chicken nutrition will decrease the amount of pigment in shells
