Why are some tools like scissors, pruners, and vegetable peelers specific to right vs. left hands?

As a lefty I’m kinda used to using righty scissors and shears in my left hand. IIRC the difference between lefty and righty scissors is not just the shape of the grips, but also which side the blades are on relative to each other. As a righty, when you use righty scissors the action of squeezing the scissors closed also slightly squeezes the blades together. If I try and use righty scissors like lefty scissors I find I’m pushing the blades apart, and the paper or whatever may twist and slip between the blades instead of being cut. I have to contort my hand a bit to make sure I don’t let this happen. I’ve done this so much that it’s kind of second nature now.
