Why can companies collect info on me to sell? Not just google, but car companies, credit bureaus, etc.

Because there’s no law preventing it, and it’s profitable for them to do it.
Or because there is a law which might prevent it, but it’s profitable for them to do it, so they make you agree to it in order to use their services.
Or because there is a law which might prevent it and you haven’t consented, but it’s profitable for them to do it, so they put their HQ somewhere without that law and bypass your consumer protections.
Or because there is a law which might prevent it and you haven’t consented and the EU has made the law apply internationally, but it’s profitable for them to do it, so they make money now with the knowledge that it’ll be years (if ever) before they are punished, and any fine they receive will likely be less than the profit they made from doing it.
TL;DR: It’s profitable and they can get away with it.
