Why can’t we eat food frozen for over a year?

My mum told me to be careful about using raw sweet potato from the freezer that had been frozen a year ago. How would it go off in the freezer?

Freezing doesn’t kill bacteria it just dramatically slows them down or puts them into a form of hibernation so they can still be slowly multiplying or releasing toxins into the food. https://youtu.be/9aPZGF4gQag
