Why couldn’t they just dig a trench big enough to connect the Pacific and Atlantic instead of the lock system of the Panama Canal?

Mountains. The suez canal is basically just a trench because it was a bit like digging in a sandbox. It also helped that there is actually rain and source of water. You could theorectically make a canal that goes up to mount Everest if you had a source of flowing water from the summit because you need to fill the locks to lift the ships up. The pharaohs used the water (potentially from floods) from the Nile to make their canal work but the French just dug a giant trench after they confirmed that sea level in both the Mediterranean and the red sea was the same so they could be sure they wouldn’t be releasing a giant torrent.
