Why do bananas immediately start turning brown after peeling them, while they can stay yellow/green for a while unpeeled?

When you peel them they get exposed to air and that dissipates ethylene gas (ripening gas) and the ripening process speed up.

The oxygen in the air wants to be friends with the mushy banana, the banana has its peel to protect it’s fruity inards for as long as possible as the fruit his a seed and the banana are like the trees babies.

No idea how banana palms are acc propigated but sure plants have fruit to seed and continue, we’ve bread them to our own wants and needs by now
