More complex carbohydrates break down into simple sugars when you cook them. The same thing happens to other veggies.

Carrots, very much like other root vegetables, contain complex sugars which humans dont find sweet. When they are cooked, these sugars break down to more simple sugars, like sucrose which humans do find sweet.
