Many insects have their legs operated by hydraulic pressure, the squeeze a sack and that increases the pressure which let’s the let expand. When the insect dies, the hydraulic pressure is no longer there, and eventually as the insect dries out and legs will curl up. This usually makes their legs point straight down, and the top heavy body flips the insect over
