Different minerals dissolved in the water, one of the most common is calcium carbonate, which is the white/grey deposit you get forming on the inside of kettles.

Basically just different mineral content, whilst water sounds pretty basic as just H2O and pure H2O is tasteless and odourless. However it usually contains lots of different elements and compounds depending on where it comes from. Whether that is spring water, bottled or tap. The different amounts of those elements and compounds will change it’s taste, such as well water often having a chalky or mineral taste because it has filtered through the ground over time.
