Why do flavors “hit” at different times in our mouth?

The flavors are already there. The sweetness is noticed first because of dopamine and once it wears off, you are accustomed to the heat. Also, the heat from spices is a pain sensation that does not get noticed as fast as the taste sensation because of the wiring of the brain.
