Because they fly zigzag all the time. If they sit still everything turns grey, they can’t see unless they’re moving.

You’re thinking like a human (i.e. why) and not like a fly. A fly is more like one of those toys that drive around the floor and randomly change direction when they encounter an object. Fly’s are basically a very simple input/ output device and they move like that because the inputs keep changing and changing the outputs.
