Why do flys tend to be around/on humans instead of just flying around?

There is an old publication called “Cow By The Tail” that was the autobiography of a young Texas cowhand on the early cattle drives. If memory serves, he described a scene of coming across some slaughtered buffalo that white hunters had left to rot. He made a point of saying there were no flies, and that flies came to the prairie only with civilization. Whether that’s true or not, it’s still an interesting book if you can find it.
