Camouflage is a leftover from earlier times, a traditional uniform of sorts. In Europe, even, people hunt very successfully in traditional uniform here, which is something of an olive or greenish color, without the pattern. Duck hunting, obviously, is supplemented heavily by modern camo patterns.

Vests were added because orange is a color seldom seen in forest, thus giving out a strong contrast between an animal and a hunter. Hundred missed opportunities are second to shooting and finding your buddy in a pool of blood, and I absolutely salute that.
