Why do liquors that are made from carb-heavy foods like potatoes (vodka) and sugar cane (rum) have no digestible carbs in them?

Because the carbs are already digested by yeast into alcohol which is not a carb. It can be digested some more into vinegar though, so you actually gain some caloric energy from it, even though there’s 0 carbs, fats and proteins.
