I’d assume that mosquitoes bite more than once so they can ingest more blood and also so they don’t become a sitting duck and get swatted.
I don’t know about the second question, but since the blood is necessary for their reproductive cycle, mating mosquitos work in tandem, but on opposite sides of the target. The male generally acts as a distraction to ensure the female’s safety. I would think being near their target’s ears would be an evolutionary disadvantage as they would be easier to detect.
